The "4 Lakes" of Kyr Giannis estate is a delightful and aromatic blend of the varieties Chardonnay and Gewurztraminer. It is located at an altitude of 600 m, has a total area of 165 acres and belongs to Municipality of Ag. Panteleimon within the limits of the viticultural zone PDO Amyntaeo. The yield per hectare of the vineyard does not exceed 700 kg per hectare for Chardonnay and 600 kg per hectare for Gewurztraminer. The poor and sandy soils offer the possibility for the production of wines with exceptional finesse and rich aroma. The climate of the area is characterized by cold winters and hot summers, while the presence of four lakes contributes to a mild continental climate that favors the cultivation of white varieties. Before the start of alcoholic fermentation, the grapes of both varieties undergo pre-fermentation extraction at a low temperature. This process helps the extraction of the aromatic substances found in the rind and contributes to the creation of aromatic wines. This is followed by desilting and inoculation with a pure culture of selected yeasts. 50% of the total amount of Chardonnay is vinified in 100% new oak barrels, in which it will then age for 8 months. As long as the wine remains in the barrel, the lees are stirred, a process that gives it volume, oiliness and complexity. For the quantity that is vinified and then remains for maturing in a tank, the finer lees are stirred. A portion of the Chardonnay undergoes malolactic fermentation in barrel, which softens the acidity and adds buttery and nutty aromas to the wine. At the end of aging, the blend is selected. Intense aromas of rose petals, rose delight and lychee, characteristic of a high-quality Gewürztraminer, are combined with notes of vanilla and smoke from barrel aging, balancing with crisp acidity in one of the best vintages this particular wine has given us.
